Turkey Meatloaf

 

My friend and neighbor, Sharon Inkeles, shared this recipe with me.  You can dress it up or dress it down – it can be a simple, middle of the week dinner or take center stage at the Shabbat table – it is that good.

 

Ingredients

½ large onion, diced

½ green pepper, diced

1 tablespoon extra-virgin olive oil

½ teaspoon cayenne pepper

½ teaspoon black pepper

½ teaspoon cumin

1 pound ground turkey – mixed white and dark meat

½ cup ketchup plus more to glaze the loaf

1 teaspoon fish-free Worcestershire sauce

1 egg

½ cup fresh bread crumbs

Preparation

  1. Preheat oven to 350° F.
  2. Sauté onion and pepper in olive oil on medium heat until soft.  Add cayenne pepper, black pepper and cumin.  Sauté for 45 seconds, and then allow to cool.
  3. Combine cooled mixture with ground turkey, ketchup, Worcestershire sauce, egg and breadcrumbs.  Form into loaf and place in Pyrex roasting pan.
  4. Bake for 20 minutes.   Remove from oven and spread ketchup on top of the loaf.  Return to oven.
  5. Continue baking for 40 minutes.
