My friend and neighbor, Sharon Inkeles, shared this recipe with me. You can dress it up or dress it down – it can be a simple, middle of the week dinner or take center stage at the Shabbat table – it is that good.
Ingredients
½ large onion, diced
½ green pepper, diced
1 tablespoon extra-virgin olive oil
½ teaspoon cayenne pepper
½ teaspoon black pepper
½ teaspoon cumin
1 pound ground turkey – mixed white and dark meat
½ cup ketchup plus more to glaze the loaf
1 teaspoon fish-free Worcestershire sauce
1 egg
½ cup fresh bread crumbs
Preparation
- Preheat oven to 350° F.
- Sauté onion and pepper in olive oil on medium heat until soft. Add cayenne pepper, black pepper and cumin. Sauté for 45 seconds, and then allow to cool.
- Combine cooled mixture with ground turkey, ketchup, Worcestershire sauce, egg and breadcrumbs. Form into loaf and place in Pyrex roasting pan.
- Bake for 20 minutes. Remove from oven and spread ketchup on top of the loaf. Return to oven.
- Continue baking for 40 minutes.
