Turkey Roast

 

Ingredients

3 – 4 pound turkey breast with skin, rolled widthwise and tied with butcher's string

¾ cup firmly packed dark brown sugar

1 cup ketchup

¾ cup water

¼ cup vegetable oil

3 tablespoons balsamic vinegar

3 tablespoons soy sauce

1 small onion, diced

Preparation

  1. Preheat oven to 450° F.
  2. Place turkey breast in Pyrex baking dish.
  3. Combine sugar, ketchup, water, oil, vinegar, soy sauce and onion.  Pour over turkey.
  4. Bake, covered, for one hour.  Reduce oven temperature to 350° F and bake, uncovered, for 30 to 40 minutes, or until done (internal temperature should read 170° F with meat thermometer).
  5. Tent with foil and let rest for 15 minutes. Slice and serve covered with the pan sauce.
