½ cup apple cider vinegar
½ purple onion, thinly sliced
2 teaspoons honey
1 small head cabbage, cored and thinly sliced
3 medium carrots, peeled and grated
1 celery stalk, finely sliced
1–2 tablespoons olive oil
Freshly ground black pepper
½ cup mayonnaise
1–2 tablespoons dijon mustard
Salt to taste
Big pinch cayenne pepper
½ cup snipped dill and flat leaf parsley
Warm apple cider vinegar and purple onion in microwave for 45 seconds. Let cool.
Stir in honey until it dissolves.
Combine cabbage, carrots and celery in large bowl. Toss with olive oil.
Pour vinegar-honey mixture over the vegetables. Toss to combine.
Season with pepper and mustard and toss to combine. Let sit for 15 minutes.
Add mayonnaise, cayenne and herbs and toss well. Taste for seasoning.
