Squash Pudding

 

This recipe comes from our dear friend and fabulous cook, Shira Levin.

 

Ingredients

Four 12-ounce boxes frozen cooked winter squash, thawed

4 tablespoons margarine, softened

½ cup sugar

½ cup maple syrup

¾ cup flour

5 eggs, beaten

Preparation

  1. Preheat the oven to 350° F.
  2. In a large mixing bowl, combine all ingredients and mix well.
  3. Add squash mixture to greased, 10” x 13” baking dish.
  4. Bake for 1 hour to 1 hour 10 minutes until the pudding is solid.  Serve warm.
