Salmon – Blackened

 

Great any time of the year.

 

Ingredients

2 ½ pound salmon fillet

1 tablespoon freshly grated ginger

3 cloves garlic, smashed

¼ cup balsamic vinegar

2 tablespoons toasted sesame oil

2 tablespoons light soy sauce

⅓ cup sugar

Preparation

  1. Place salmon in glass casserole or oven safe dish.

  2. In a small bowl, mix ginger, garlic, vinegar, sesame oil, soy sauce and sugar with a fork and pour over fish. Cover the dish with plastic wrap and marinate for up to one hour.

  3. Pre-heat broiler.

  4. Place marinated fish on a broiling pan, skin side down.  Broil fish on middle rack of oven for 14 minutes, turning the pan in the middle for even broiling on all sides. A dark, hard brown/black crust will form on top.

  5. Remove fish from broiling pan with a spatula and place on serving platter.
