Ingredients
12 large plum tomatoes, halved lengthwise, cores and seeds removed
¼ cup extra-virgin olive oil
1 ½ tablespoons balsamic vinegar
2 large garlic cloves, minced
2 teaspoons sugar
1 ½ teaspoons Kosher salt
½ teaspoon freshly ground black pepper
6 basil leaves, sliced in strips
Preparation
- Preheat the oven to 450° F.
- Arrange the tomatoes cut side up on a parchment-lined rimmed baking sheet. Drizzle with olive oil and vinegar. Sprinkle garlic, sugar, salt and pepper over tomatoes. Roast for 45 minutes, until tomatoes are concentrated and beginning to caramelize and sweeten.
- Serve warm or at room temperature topped with sliced basil.
