1 pound ground mixed turkey
1 large zucchini, grated
3 scallions, chopped
1 egg
2 tablespoons chopped fresh mint
2 tablespoons chopped cilantro
2 cloves garlic, chopped
1 teaspoon ground cumin
1 teaspoon Kosher salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
A few tablespoons olive oil, for cooking
In a large bowl, combine all the burger ingredients except for the oil. Mix together with your hands until evenly combined.
Shape into six burgers.
In a large frying pan (I use a 12” frying pan), over medium heat, pour enough oil to coat the bottom of the pan. When the oil is hot, transfer as many burgers as will comfortably fit.
Sear the burgers so that they are golden brown on one side, then flip them and sear the other side.
Serve plain or on a bun.
