Middle of the Week Chicken Thighs

 

Ingredients

1 tablespoon dijon mustard

1 tablespoon apricot jam

Kosher salt

1 teaspoon cider vinegar

1 teaspoon olive oil

Cayenne pepper to taste

4 chicken thighs

Preparation

  1. Mix together mustard, jam, salt, vinegar, olive oil and cayenne pepper.

  2. Brush mixture on the chicken thighs.

  3. Roast at 400° F for 45 minutes.
