My sister, Cheffie, found this recipe a few years back and we have given up our traditional Ashkenazi charoseth of walnuts, apples and wine in favor of this one. It brings a spark of sunshine into our Passover meal.
Ingredients
½ cup pine nuts
2 apples, peeled and grated
1 cup sugar
Cinnamon to taste
Allspice to taste
4 hard-boiled egg yolks, mashed
1 cup ground almonds
2 lemons, juiced and zested
¾ cup golden raisins
Preparation
- Mix all ingredients in a medium bowl and chill. Serve at room temperature.
