Grilled Chicken Satay

Ingredients

Peanut Marinade:

½ cup chunky peanut butter (no salt or sugar added)

½ cup peanut oil

¼ cup white vinegar

¼ cup tamari

¼ cup fresh lemon juice

4 garlic cloves, crushed

8 cilantro leaves, minced

½ jalapeno pepper, minced

2 teaspoons chopped fresh ginger

Chicken:

4 chicken cutlets, cut into 1” wide strips

Wooden skewers, soaked in water

Rice or grain of your choice, cooked

Preparation

  1. Combine all marinade ingredients in bowl and whisk until smooth.  Add chicken strips.  Cover and place in refrigerator.  Marinate for 2 hours.

  2. Heat grill to high.  Thread chicken onto double skewers (for ease of turning) and grill 2 minutes per side.
