Whole-Wheat Banana (Nut) Bread

 

This bread can easily be halved, if two breads are more than you need.  Good with or without nuts and, if you have a sweet tooth, add 1 cup chocolate chips.

 

Ingredients

2 ½ cups King Arthur white whole-wheat flour

2 teaspoons baking soda

1 teaspoon salt

1 cup (2 sticks) unsalted butter, room temperature

2 cups sugar

2 cups mashed ripe banana (4 large bananas)

4 extra-large eggs

1 cup chopped walnuts or pecans

Preparation

  1. Preheat oven to 350° F. 

  2. In a medium bowl, combine flour, baking soda and salt; set aside.  In a large bowl, beat butter and sugar until blended.  Beat in banana, then beat in eggs until completely mixed.  Stir in nuts (and/or chocolate chips).  Add combined dry ingredients and stir just until blended.

  3. Spread evenly into 2 greased and floured loaf pans.  Bake until a toothpick inserted in the center comes out clean, approximately 55 minutes.  Cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.

Yield: 2 loaves
