I think Alana, Sam and Talia would agree that they would not have made it through childhood without macaroni and cheese. I am embarrassed to include this recipe, which I cobbled together out of necessity, but I wouldn’t be honest about my finest meals if it were not included. To accompany that recipe, I have included a few others. But they really are here as window dressing to the masterpiece of my children’s childhood – macaroni and cheese.
I received phone calls from many mothers, eager for this "secret" recipe. My children’s friends’ eyes would light up when I promised them macaroni and cheese during their playdate. These friends, grown now, tell me how, when they were small, they looked forward to coming here and eating…you guessed it.
And here it is. In this case, the secret is in the individual 10-ounce Pyrex dishes…
Ingredients
Elbow macaroni, cooked
Milk, 2% or whole
Sliced American cheese
Individual, 10-ounce pyrex dishes with glass covers
And, yup, that’s it...
Preparation
- Fill individual pyrex dish half-way with macaroni. Layer slice of American cheese on top. Add more macaroni on top of cheese. Place one more slice on top of that. Pour 2 tablespoons of milk on macaroni and cheese. Cover with glass top.
- Place dish in microwave on top of small plate, to catch spillage. Microwave on high for 45 seconds.
- Remove cover and serve.
