Lemon Bars

 

A Siegel Ringler family favorite.

 

Ingredients

Filling:

2 extra-large eggs

1 cup granulated sugar

2 tablespoons flour

½ teaspoon baking powder

Grated rind of 1 lemon

2 ½ tablespoons freshly squeezed lemon juice

1 teaspoon sifted powdered sugar for dusting

Crust:

½ cup butter, more for pan

1 cup flour

¼ cup powdered sugar

 

 

 

 

 

 

Preparation

  1. Preheat oven to 350° F.
  2. In a medium bowl, beat butter, flour and sugar together until blended.  Pat mixture into a lightly buttered 9” x 9” pan.  Bake for 15 minutes.  
  3. While the crust is baking, in a medium bowl, beat eggs and sugar together.  Add flour, baking powder, lemon rind and lemon juice and blend.
  4. Pour lemon mixture on baked crust.  Bake for an additional 25 minutes.  
  5. Allow to cool.  Cut into squares and dust with sifted powdered sugar.
