Curried Tuna Salad

 

My niece, Melissa, was not terribly interested in cooking when we first met but she has become a veritable marvel in the kitchen.  She bakes, cooks, pickles and cans.  This recipe comes from Melissa and it has become a house favorite.

 

Ingredients

12 ounces canned white meat tuna, packed in water, drained and flaked

1 stalk celery, finely chopped 

1 piece red onion, finely chopped

⅓ – ½ cup dried fruit such as raisins, golden raisins, cranberries, cherries

2 tablespoons curry powder

4 – 6 tablespoons mango chutney

4 – 6 tablespoons Hellman’s mayonnaise

½ cup slivered almonds, lightly toasted

Fresh cilantro, chopped

Preparation

  1. Mix flaked tuna with celery, onion, dried fruit in glass bowl.

  2. Stir in curry powder and stir then mango chutney and mayonnaise.

  3. Before serving, sprinkle toasted nuts and chopped cilantro on top.
