Blueberry Muffins

 

Ingredients

2 cups all-purpose flour

⅔ cup sugar

2 ½ teaspoons baking powder

¼ teaspoon baking soda

½ teaspoon salt

½ teaspoon cinnamon

1 cup whole milk

½ cup melted butter

2 eggs

1 cup blueberries

1 diced ripe banana (optional)

Preparation

  1. Preheat oven to 400° F.  

  2. In a medium bowl, stir flour, sugar, baking powder, baking soda, salt and cinnamon; set aside.  In another medium bowl, whisk together milk, butter and eggs until smooth.  Add dry ingredients and stir until just blended.  Add blueberries, and banana if using; stir just until evenly incorporated.

  3. Spoon into paper-lined muffin tins, filling each cup until ¾ full.  Bake until a toothpick inserted in the center of a muffin comes out clean, approximately 15 – 20 minutes.

  4. Cool in tins for 5 minutes, then remove.

Yield: 12 – 15 muffins
